 Hard to believe we are already approaching 2014. As we get ready for another brochure of great classes we’re looking at making some changes. We have many people asking us about our Professional Foundations and Pastry Program. Many have a desire to take these week long classes, but find it difficult to take time off from work. With this in mind we’re going to try an experiment in the hopes to attract more people to the program. Starting in 2014 we’ll offer these week long classes at night. The Pastry Program will be during the week from 4:00-9:00 p.m. and the Foundations program will run Wednesday-Friday from 4:00-9:30 p.m. and Saturday and Sunday from 9:30 a.m.-4:00 p.m. Hopefully this will allow more people to participate. You’ll also notice that we’ve dropped the word “Professional” from these classes. Again this change is being made to make them more approachable to the general public. Whether you’re looking to go into the culinary field or just want to improve your cooking knowledge, we hope you’ll find what you’re looking for in our programs.

We have a great line-up of Featured Chefs this brochure. Monday, February 3rd we will welcome our good friend Wendy Kromer-Schell back into the kitchen to do a class on French macarons. On Monday, March 3rd, back by popular demand is Chef Mike Bruno from the Blue Door Cafe and Bakery to show us his secrets in making puff pastry and brioche. On Monday, April 28th we welcome Chef Jared Bergen from Flour (Mooreland Hills) for a class on gnocchi, risotto and polenta. Should be a great line-up of local chefs.

Please keep in mind our cancellation policy: once a class has been purchased it is non-refundable. 3 days cancellation notice to receive a credit towards another class. If we need to cancel a class you will receive a phone call 2-3 days before that class to hear your options. For the week long classes there is a 2 week cancellation notice required to move your $150 deposit to another class. If you need to cancel within 3 days of a class, please note that preparations are in progress for that class and you can send someone else in your place. If you fail to show up for a class then you do lose your spot. Please note that we make every effort to run a class, but if enrollment is low then we do need to cancel.

If you really want to get involved, please let us know. We have a volunteer program that earns you credit towards taking classes. Volunteers help, learn and get to eat. So please let us know if you are interested in helping.
